Prof Rao introducing his thesis on Food Science
Prof Rao earned his PhD in biochemistry from Osaka University in Japan and then moved on to teach at Fuzhou University.
During the lecture, Prof Pingfan talked about how the single most important thing for humans is the food that we eat. “The impact of food on the human body is a millions times larger than the air we breathe but people don’t think of food that way, people don’t understand food and that’s where we (food scientist) come in and make our contribution”.

His main focus for this lecture was on instant noodles. He explained that in the last two years instant noodles have made a comeback and are now very popular again, but they are currently the sixth most consumed junk food. The problem with instant noodles is that they do not digest well and can cause throat irritation and stomach aches.
Prof Rao explained that food has a much greater role to play than just feeding and energy before ending the lecture by telling students to listen to the body’s response to food.
